The rapadura is a food preparation consisting of unrefined raw cane sugar, made from sugar cane juice boiled and filtered. Molasses resulting from this process are beaten to have a more consistent compound and poured in the traditional rectangular shapes. The rapadura, known for its high caloric and nutritional value, rich in minerals, protein and vitamins, is used in many countries in South America as a sweetener or food. This report shows the entire production process, from harvesting of sugar cane to the finished product, in one of the last plants ("engenhos") of Carir still in function using ancient methods and craft tools.
