We are in Valtellina, a valley in the north of Lombardy, Sondrio province, right in the middle of the Alps. In Valtelina Valley (Italian Alps) above 2000 meters in summer time cows graze on high pastures, where the grass is special and gives to the cheese its extraordinary taste. Here one can find the simple and natural environment which is peculiar to mountain life, to a rural area deeply rooted in its local culture. Cattle breeding and the production of refined cheese are the heart of this system, representing both its cause and effect.
This is hard work, of sacrifice, often there are no roads and electricity, only respect and love for nature allows these ancient traditions to resist for generations. The maintenance of agro-pastoral activities therefore becomes fundamental in order to preserve the extraordinary richness of the numerous valleys, protecting at the same time local productions (such as mountain cheeses) and defending the alpine landscape.
Still nowadays those valleys radiate that special atmosphere we continue to enjoy and offer the signs and symbols of a pastoral world in its most authentic and traditional traits.
